Beef mince can go brown for a number of reasons. If it’s been sitting out at room temperature, the warmth may cause it to change colour. If it’s been cooked and then refrigerated, the beef mince may darken as it oxidises. Oxidation is a chemical reaction that happens when meat is exposed to oxygen. The process is accelerated by heat, so cooked beef mince is more likely to turn brown than raw beef mince. You can prevent oxidation by storing cooked beef mince in an airtight container or wrapping it tightly in plastic wrap. Once the beef mince has turned brown, it’s safe to eat. The colour change doesn’t affect the flavor or texture of the meat.
